BANGERS, BAKED SPUD AND GUACAMOLE

 

A super easy, yet super tasty supper. The guacamole is a fantastic filling for the jacked potato!

 

Serves 2

 

1 pot of Purely Guacamole

6 pork sausages

2 large potatoes

olive oil (drizzle)

salt and pepper to taste

 

Method

 

  • Turn the oven on to 180oC

  • Score the potatoes.

  • If you have a microwave pop the potatoes in for 5 minutes each to soften. If you don’t then pop them on a baking tray, drizzle with olive oil and sprinkle some salt on top. Place in oven for 55 minutes.

  • Once the potatoes have had 55 mins, put the sausages on a baking tray, drizzle with olive oil. move the potatoes down a shelf and pop the sausages on the top shelf for 30-35 mins.

  • If you have microwaved your potatoes, put them in at the same time as the sausages on the same tray. (Drizzle the potatoes with oil and season).

  • Once the sausages and potatoes are golden. Serve immediately with a generous helping of Purely Guacamole.
